Cheese Offering

Bouq’Emissaire
From the region of Monterigie in Quebec. This younger goat’s milk is cured in-house for three months and is made by the famous cheese maker CHAPUT. A rare and beautiful cheese. The ash covering gives an earthiness to the taste of the cheese.

Rochetta
Goat, sheep and cow’s milk from Northern Italy in Piedmont. Very unique fresh cheese is flown into Canada once a month by Cheese Boutique. This cheese has a very French influence, creamy and sharp.

Roquefort Papillion Noir
Blue Cheese par excellence. Made from Ewe’s milk. Aged in limestone mountain caverns made by the aristocracy of Roquefort Producers. Ripe Roquefort is creamy and white on the inside and has a thin burnt orange skin.

Farmhouse Smoked Applewood Cheddar
Made in Somerset, England this cheddar is made the traditional way on a farm. This artisinal cheese is smoked by burning applewood chips.

Mimolette
An unpasteurized cow’s milk cheese from the Auvergne region of France. Aged in-house for four years, this cheese has a beautiful orange colour and a nice salty, nutty bite.

Le Douanier
A raw cow’s milk cheese from Quebec. Blackwood ash is scattered through centre of cheese to separate morning cow’s milk from afternoon cow’s milk, aged six months.
